Pasta Alla Norma

Ingredients

  • 2 medium eggplants (about 1 1/2 lb), cut into 1-inch cubes
  • 1 tbsp kosher salt, for drawing out moisture
  • 1/2 cup Lucini Premium Select, for frying (divided)
  • 4 garlic cloves, thinly sliced
  • 1/4 tsp red pepper flakes
  • 1 (28-oz) can whole peeled San Marzano tomatoes, crushed by hand
  • 1 tsp sugar, if the tomatoes need it
  • 1 lb rigatoni
  • 1 cup fresh basil leaves, torn, divided
  • 3/4 cup ricotta salata or Parmesan, finely grated, plus more for serving
  • 2 tbsp Lucini Premium Select, to finish
  • Salt and pepper

Instructions

  1. Toss the eggplant with the kosher salt in a colander and let it drain 30 minutes. Pat thoroughly dry, since wet eggplant steams instead of browning.
  2. Heat 1/4 cup Lucini Premium Select in a large skillet over medium-high. Fry the eggplant in two batches, turning occasionally, 8 to 10 minutes per batch, until deeply golden and creamy inside. Add the remaining oil as needed between batches. Drain on paper towels.
  3. Lower the heat to medium. Add the sliced garlic and red pepper flakes to the pan and cook 1 minute, until fragrant but not browned.
  4. Add the crushed tomatoes and a pinch of salt. Simmer 20 to 25 minutes, stirring now and then, until thickened and glossy. Taste, and add the sugar only if it's sharp.
  5. Meanwhile, cook the rigatoni in well-salted water until just shy of al dente. Reserve 1 cup pasta water before draining.
  6. Return all of the eggplant to the sauce along with half the basil.
  7. Toss the pasta into the sauce with a splash of pasta water, loosening until every piece is coated.
  8. Off the heat, stir in half the grated cheese. Finish with the remaining basil, the rest of the cheese, and a generous pour of Lucini Premium Select.
