Olive Oil Madelines

- 3 eggs
- 473g sugar
- 340g milk
- 435 cake flour
- 9g baking powder
- 6g salt
- 283g California Olive Ranch extra virgin olive oil
- zest of 1 lemon
- Beat eggs and sugar until creamy, add milk and combine, add flour baking powder and salt. Mix 2 minutes the drizzle in California Olive Ranch extra virgin olive oil till combined. Let rest 12 hrs.
- Pipe into Madeline molds coated with butter and bake at 350 degrees for 6 minutes.
- Immediately take them out of the mold and using a syringe injector fill them with a squirt of mild fruity California Olive Ranch extra virgin olive oil and dust with powdered sugar.
