Matcha Olive Oil Cupcakes Recipe

Ingredients
- 1⅓ cups all purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- 1½ tbsp culinary matcha
- 2 large eggs
- ¾ cup granulated sugar
- ½ cup California Olive Ranch 100% California Extra Virgin Olive Oil
- ½ cup whole milk
- 2 tsp vanilla extract
- Vanilla frosting, for topping
- Rainbow sprinkles, for topping
Instructions
Preheat oven to 350. Line a cupcake pan with liners and set aside.
In a medium bowl, whisk together the flour, baking powder, salt, and culinary matcha.
In the bowl of a stand mixer, whisk together the eggs and granulated sugar on high speed for two minutes. Turn the speed down and slowly mix in the California Olive Ranch 100% California Extra Virgin Olive Oil, then add the eggs and vanilla extract.
Slowly mix in some of the dry ingredients, then the milk, going back and forth until you finish both.
Pour the batter into the prepared pan, filling each cup up about ¾ of the way. Bake for 20-22 minutes, until an inserted toothpick comes out clean.
Cool cupcakes completely on a wire rack. Top with the vanilla frosting and a finish with sprinkles.
