Olive Oil Gingerbread With Spiced Whipped Cream

Ingredients

  • 1 cup plus 2 tbsp all-purpose flour
  • 1 tsp ground ginger
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp freshly grated nutmeg
  • 3/4 tsp baking soda
  • Scant 1/2 tsp kosher salt
  • 6 tbsp California Olive Ranch 100% CA Everyday
  • 6 tbsp dark molasses
  • 1/4 cup packed brown sugar
  • 1 large egg, room temperature
  • 1 1/2 tsp fresh ginger, grated
  • 1/2 cup hot water

Spiced whipped cream

  • 1 cup heavy cream, cold
  • 3 tbsp mascarpone, cold (optional)
  • 2 tbsp honey
  • 1/4 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Olive oil and ground cinnamon, to finish

Instructions

  1. Heat the oven to 325°F. Grease a 9x5 metal loaf pan and line the bottom with parchment.
  2. Whisk the flour, ground spices, baking soda and salt together.
  3. In a large bowl, whisk the olive oil, molasses and brown sugar until smooth. Whisk in the egg, then the grated fresh ginger.
  4. Add the dry ingredients and whisk until just combined.
  5. Pour in the hot water and whisk smooth. The batter will look alarmingly thin. That is correct, and it is what keeps the crumb tender.
  6. Pour into the pan and bake 45 to 55 minutes, until the center springs back when pressed.
  7. Cool at least 20 minutes in the pan, then turn out. Gingerbread slices cleanly once it settles.
  8. Whip the cream with the honey, cinnamon and vanilla to medium-stiff peaks, where a peak stands and just barely curls at the tip. If you are using the mascarpone, beat it alone with the honey, cinnamon and vanilla for about 30 seconds first, until smooth and loosened, then pour the cold cream in with the mixer running and whip them together.
  9. Once the gingerbread is completely cool, spoon the cream over the slices in generous swoops, pressing the back of the spoon in to leave a hollow in each one. Drizzle olive oil into the hollows and dust with cinnamon.
