Holiday Sugar Cookies

Ingredients

Cookies

  • ¾ cup (170 g) unsalted butter, room temperature
  • ¼ cup (60 ml / 56 g) California Extra Virgin Olive Oil
  • 2 cups (400 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 Tbsp pure vanilla extract
  • ½ tsp almond extract
  • 1–2 tsp orange zest or ⅛ tsp orange extract (optional)
  • 3½ cups (440 g) all-purpose flour
  • 1 tsp fine sea salt

Frosting

  • 4 oz (115 g) cream cheese, softened
  • 2 Tbsp (30 ml) California Extra Virgin Olive Oil
  • 4 cups (480 g) powdered sugar, sifted
  • 2–3 Tbsp whole milk, added gradually
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • Pinch of sea salt
  • Optional: natural food coloring or sprinkles

Instructions

  1. Make the Dough
In a stand mixer or large bowl, beat the butter, olive oil, and sugar together until smooth and cohesive, about 1–2 minutes.
Add eggs one at a time, followed by vanilla, almond extract, and optional orange zest or extract and salt. Mix until smooth.
Gradually add flour into wet ingredients until just combined.
  2. First Chill
Wrap the dough tightly in plastic wrap or place in a covered bowl and chill for at least 1 hour (or overnight). This helps the dough firm up for easier rolling and better texture.
  3. Preheat & Prep
Once the dough has chilled, preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  4. Roll, Cut & Second Chill
On a lightly floured surface, roll chilled dough to about ¼ inch (6 mm) thickness. Cut into desired shapes and place on prepared baking sheets. No cookie cutters? Use the rim of a glass to cut perfect circles.
Chill shaped cookies again for 10–15 minutes before baking to prevent spreading and keep edges sharp.
  5. Bake
Bake cookies for 8–12 minutes, until edges are lightly golden and centers are set.
Cool on the pan for 2 minutes, then transfer to a wire rack to cool completely before frosting.
  6. Make the Frosting
In a medium bowl, beat softened cream cheese until smooth.
Add olive oil, powdered sugar, vanilla, almond extract, and salt.
Add milk one tablespoon at a time until the frosting is light, creamy, and spreadable.
  7. Frost & Finish
Spread frosting on cooled cookies, decorate with sprinkles or natural coloring if desired, and let set before stacking or packaging.
  8. Baker’s Notes
Chill the dough twice for best results — once after mixing and again after cutting.
Olive oil keeps cookies soft, tender, and fresh for days.
