Grilled Peach S’mores

Ingredients

  • 4 ripe but firm peaches, pitted and cut into 1/2-inch slices
  • 2 tbsp California Olive Ranch 100% CA Everyday, plus more for finishing
  • 4 to 8 graham cracker sheets, broken in half (8 halves for open-faced, 16 if topping each one)
  • 3 oz dark chocolate, broken into squares
  • 8 large marshmallows
  • Flaky sea salt

Instructions

  1. Heat a grill to medium, about 400°F. Scrape the grates clean and oil them lightly.
  2. Brush both sides of the peach slices with the 2 tbsp olive oil.
  3. Grill the slices 2 to 3 minutes per side, until well marked but still holding their shape. Overcooked slices slump out of the stack.
  4. Toast the marshmallows on skewers over the flame, turning, until golden, 1 to 2 minutes. No campfire or grill? Set them on a parchment-lined sheet pan and broil, watching the whole time, since they go from golden to burnt in well under a minute.
  5. Build each s'more: a graham square, a square of chocolate, a toasted marshmallow, and 2 or 3 grilled peach slices. Serve open-faced, or press a second graham on top so the heat melts the chocolate through.
  6. Drizzle with a little more olive oil and finish with flaky salt.
