Fried Fish Tacos with Corn Slaw and Lime

Ingredients

Corn slaw

  • 2 ears corn, kernels cut off (about 1 1/2 cups)
  • 3 cups green cabbage, thinly shredded
  • 1/4 cup cilantro, roughly chopped
  • 2 tbsp California Olive Ranch 100% CA Everyday
  • Juice of 1 lime
  • 1/2 tsp kosher salt

Fish

  • 1 1/2 lb cod or rockfish, cut into 1-inch-wide strips
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch (or tapioca flour, which crisps harder and holds longer; arrowroot also works but softens faster)
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 cup cold sparkling water
  • About 2 cups California Olive Ranch 100% CA Everyday, for shallow frying

Lime crema

  • 1/2 cup sour cream or crema
  • Zest of 1/2 lime plus 1 tbsp juice
  • 1 small garlic clove, grated
  • 1/4 tsp kosher salt
  • Water or milk, 1 tsp at a time, to loosen

To serve

  • 8 corn tortillas
  • Lime wedges

Instructions

  1. Toast the corn kernels in a dry skillet over medium-high heat, 3 to 4 minutes, until lightly charred. Toss with the cabbage, cilantro, 2 tbsp olive oil, lime juice, and salt. Set aside. It only gets better as it sits.
  2. Whisk together the flour, cornstarch, baking powder, salt, paprika, and pepper. Whisk in the cold sparkling water until the batter is smooth and about the thickness of pancake batter. Rest 5 minutes. If using tapioca flour, skip the rest and fry immediately, since it thickens as it stands and turns gluey. Tapioca and arrowroot also brown less than cornstarch, so add another 1/4 tsp smoked paprika and judge doneness by crust color rather than time.
  3. Pour olive oil into a 10-inch heavy skillet to a depth of about 1/2 inch. Heat over medium until it reaches 350°F. A drop of batter should sizzle steadily without browning instantly.
  4. Pat the fish thoroughly dry. Dip each piece in the batter, let the excess drip off, and lay it into the oil away from you. Fry 3 or 4 pieces at a time so the oil temperature holds.
  5. Fry 2 to 3 minutes per side, flipping once, until deep golden and crisp. Drain on a wire rack and salt right away.
  6. Let the oil come back to 350°F between batches.
  7. Make the crema: stir the sour cream with the lime zest and juice, grated garlic, and salt. Thin with a little water or milk until it drizzles off a spoon.
  8. Warm the tortillas. Build each taco with slaw, a piece of fish, a squeeze of lime, and a spoonful of lime crema.
