Butternut Squash and Sage Pasta with Brown Butter Olive Oil

Ingredients

  • 1 medium butternut squash (about 2 lb), peeled, seeded, and cut into 3/4-inch cubes
  • 5 tbsp California Olive Ranch 100% CA Everyday, divided
  • 1 tsp kosher salt, plus more for the pasta water
  • 1/2 tsp freshly ground black pepper
  • 1 lb rigatoni
  • 4 tbsp unsalted butter
  • 20 fresh sage leaves
  • 3 garlic cloves, thinly sliced
  • 1/4 tsp red pepper flakes
  • 3/4 cup Parmesan, finely grated, plus more for serving
  • Zest of 1/2 lemon

Instructions

  1. Heat the oven to 425°F. Toss the squash with 3 tbsp olive oil, the salt, and the pepper. Spread on a sheet pan in a single layer.
  2. Roast 25 to 30 minutes, turning once, until the edges are deeply caramelized and the centers are tender. Browning is the whole point here, so give it the full time.
  3. Cook the rigatoni in well-salted water until just shy of al dente. Reserve 1 1/2 cups pasta water before draining.
  4. Melt the butter with the remaining 2 tbsp olive oil in a large skillet over medium heat. Add the sage leaves and cook 2 to 3 minutes, until the butter smells nutty and the leaves crisp. Lift the sage out with a fork and set it aside.
  5. Add the sliced garlic and red pepper flakes to the pan and cook 30 seconds, just until fragrant.
  6. Add the roasted squash and about half a cup of pasta water. Mash roughly a third of the squash against the side of the pan so it thickens into a light sauce, leaving the rest in pieces.
  7. Add the pasta and toss, loosening with more pasta water until every piece is glossy and coated.
  8. Off the heat, stir in the Parmesan and lemon zest. Finish with the crisped sage, more cheese, and a pour of olive oil.
  9. If your skillet is too small to toss comfortably, warm a large baking dish in the oven for a few minutes first, then combine everything in the warmed dish before serving. A cold dish pulls the heat out of the pasta and the sauce tightens up.
