White Bean Hummus with Baked Pita Chips
No better way to kick off your new year than with this delicious White Bean Hummus and Baked Pita Chips. The perfect healthy snack to share with others or make ahead to snack on throughout the week.
For the hummus:
2 15 oz cans of cannellini beans, rinsed and drained
1 clove of garlic
½ lemon, squeezed
1 tsp salt
½ tsp pepper
pinch of dried parsley
For the pita chips:
4 pita breads
¼ cup California Olive Ranch’s Miller’s Blend Extra Virgin Olive Oil
1 tsp dried parsley
salt/pepper to taste
Preheat your oven to 400 degrees. In a large mixing bowl, whisk together the ¼ cup of the Miller’s Blend Extra Virgin Olive Oil, 1 tsp of dried parsley and salt/pepper. Cut your pita bread into small triangles (pizza cutter is easiest). Add your triangles into the large mixing bowl and toss well until evenly coated. Arrange your triangles on a baking sheet in an even layer and bake for 10 minutes, or until desired crispiness.
While your pita chips are baking, add all of your hummus ingredients to a food processor and pulse until smooth. Transfer to a bowl and garnish with additional olive oil and parsley. Lay your pita chips around the bowl for dipping and enjoy!
