1 pound white beans, soaked overnight and rinsed
1/2 cup chives
4 cloves roasted garlic, peeled
3/4 cup Lucini® Premium Select Extra Virgin Olive Oil®
Salt and freshly ground pepper
5 cloves garlic, peeled and crushed
1 red onion
Add soaked beans to a large pot with the five cloves of garlic (raw, peeled and crushed) and the onion. Cover with two quarts of water and add 1/2 teaspoon of salt. Cook over medium high heat until tender. Once cooked, drain and discard the garlic and onion.
In food processor add cooked beans with half of the Lucini® Premium Select Extra Virgin Olive Oil®. Process for about 2 minutes until smooth. Then add chives and four cloves of roasted garlic along with the remaining extra virgin olive oil. Process for 1 minute.
Taste for seasoning. Add salt and pepper. Add more of the extra virgin olive oil if necessary for a smoother texture. Serve as a spread for bread or as a vegetable dip.
