3 tablespoons Lucini® Premium Select Extra Virgin Olive Oil®
4 large eggs
1 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper (optional)
1 cup flour
Spray or liberally rub Lucini® Premium Select Extra Virgin Olive Oil® in 12-muffin pan. Heat oven to 450 degrees.
Place first (6) ingredients, in order listed, in blender. Blend, scraping down sides, until well mixed.
Heat muffin pan in oven 5 minutes. Blend batter again until smooth and, working quickly, pour into muffin cups, dividing batter evenly (each cup should be about 2/3 full).
Place in oven and bake 15 minutes. Turn oven down to 400 degrees, without opening oven door (no peeking or popovers may fall) and bake another 15 minutes. Makes 1 dozen popovers. Serve warm with butter, honey or jam.
