Smoked Salmon, Mascarpone, Yolky Egg + Chive Toast

This is a great recipe for anytime of day that will leave you feeling so satisfied. The smoky flavor of the salmon is balanced out perfectly with creamy mascarpone cheese. Fresh chives and a peppery drizzle of California Olive Ranch Miller’s Blend Olive Oil tie everything together and the runny egg on top is well, the egg on top of this scrumptious toast.
Ingredients
- Your sliced bread of choice
- Smoked salmon
- 1 tablespoon butter
- 2 tablespoons Mascarpone cheese
- Handful chopped fresh chives
- 1 egg
- Pinch of salt and pepper each
- 1 tablespoon California Olive Ranch Miller’s Blend Olive Oil
Instructions
- Heat a skillet to medium-high heat
- Add in butter, crack egg into butter
- Cook egg until white is thoroughly cooked and crispy and yolk is still runny, about 1 minute
- Toast slice of bread
- Spread a generous amount of mascarpone cheese on toast
- Top mascarpone with smoked salmon
- Top with cooked egg
- Sprinkle with salt, pepper and fresh chives
- Drizzle with California Olive Ranch Miller’s Blend Olive Oil
