Smoked Salmon, Mascarpone, Yolky Egg + Chive Toast

Runny egg yolk fans, unite! A quick, easy meal that comes together in mere minutes and is simply packed with protein. This is a great recipe for anytime of day that will leave you feeling so satisfied. The smoky flavor of the salmon is balanced out perfectly with creamy mascarpone cheese. Fresh chives and a peppery drizzle of California Olive Ranch Miller’s Blend Olive Oil tie everything together and the runny egg on top is well, the egg on top of this scrumptious toast.


  • Your sliced bread of choice
  • Smoked salmon
  • 1 tablespoon butter
  • 2 tablespoons Mascarpone cheese
  • Handful chopped fresh chives
  • 1 egg
  • Pinch of salt and pepper each
  • 1 tablespoon California Olive Ranch Miller’s Blend Olive Oil


  1. Heat a skillet to medium-high heat
  2. Add in butter, crack egg into butter
  3. Cook egg until white is thoroughly cooked and crispy and yolk is still runny, about 1 minute
  4. Toast slice of bread
  5. Spread a generous amount of mascarpone cheese on toast
  6. Top mascarpone with smoked salmon
  7. Top with cooked egg
  8. Sprinkle with salt, pepper and fresh chives
  9. Drizzle with California Olive Ranch Miller’s Blend Olive Oil
