Simple Salad with Arugula, Goat Cheese, Fig Vinegar and Dried Figs
Ingredients
- 1 package organic arugula
- 1 8oz container dried California figs
- 1 8 oz package organic goat cheese
- 6 oz purple daikon radish or other radish
- 1 sliced red onion or shallot
- 2 tbsp Lucini Savory Fig Balsamico Artisan Vinegar
- 2 tbsp California Olive Ranch olive oil
Instructions
Toss arugula in olive oil in vinegar
Slice radish with mandolin
Slice red onion or shallot to same width as radish
Slice figs in half lengthwise
Garnish salad as desired with goat cheese and serve with fresh cracked pepper.
