Salted Brown Butter Zucchini Brownies

We’re all for the sneaky veggie trend around here. And believe us when we tell you

that these brownies are approved by even the pickiest of eaters. Gooey,

chocolatey, and divinely rich, its hard to believe this recipe is full of 3 (!) cups of

summer’s most prolific fruit- the zucchini. So if your garden is overflowing with

zucchini and you’re a chocolate lover, say hello to your new favorite dessert.

Ingredients

  • 1/2 cup California Olive Ranch Avocado Blend Oil, plus more for greasing
  • 1/4 cup salted butter, melted and lightly browned
  • 1.5 cups cane sugar
  • 2 cups all-purpose baking flour
  • 1/2 cup cocoa powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon fine salt
  • 1 tablespoon vanilla extract
  • 3 cups of finely shredded zucchini- do not drain the excess liquid
  • 1 and 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350F
  2. Grease an 8 by 12 or 9 by 13 inch baking pan with California Olive Ranch Avocado Blend Oil
  3. To a medium sized mixing bowl, add in dry ingredients of flour, cocoa powder, baking soda, salt- combine.
  4. Make a well in the center of the dry ingredients and add in oil, sugar and vanilla. Mix all ingredients well until combined.
  5. Add in melted, browned butter and mix well.
  6. Fold in zucchini by hand, then let rest for 5 minutes.
  7. After 5 minutes, stir in chocolate chips.
  8. Spread the batter evenly into the pan and bake in oven for 28-32 minutes- until cooked through in the center.
