Roasted Cauliflower Salad Recipe
If you’re looking to shake up your salad routine, this roasted cauliflower salad is meant for you. It’s rich and savory with a touch of brightness from the fresh mint, and our Garlic Apple Cider Vinaigrette ties it all together perfectly.
Ingredients
- 1 ½ heads cauliflower, cut into florets
- 2 tbsp California Olive Ranch 100% California Extra Virgin Olive Oil
- Salt, to taste
- 3 cups arugula
- 2 tbsp fresh mint, roughly chopped
- ¼ cup crushed pistachios
- ¼ cup fresh feta
- ½ bottle California Olive Ranch Garlic Apple Cider Vinaigrette
- Pepper, to taste
Instructions
Preheat the oven to 425 degrees.
On a baking sheet, toss the cauliflower with the California Olive Ranch 100% California Extra Virgin Olive Oil and sprinkle with salt. Roast 20-30 minutes, tossing halfway through. Remove from the oven and let cool.
In a large bowl, add the arugula, roasted cauliflower, fresh mint, pistachios, feta, California Olive Ranch Garlic Apple Cider Vinaigrette, and pepper. Toss until evenly coated and serve.
