Rainbow Slaw
This Rainbow Slaw is similar to a classic coleslaw only the dressing is made with lighter and healthier ingredients. It tastes just as good after a day or two in the fridge as it does directly after being made- making it perfect for meal prepping for the week ahead. Or bring it to your next picnic for a side that adds loads of both color and flavor!
Ingredients
Slaw:
- 2 cups shredded purple cabbage
- 2 cups shredded green cabbage
- 1 cup shredded carrot
- 1 red bell pepper, thinly sliced
- 1 cup flat leaf parsley, chopped
- Pumpkin seeds to garnish (optional)
Dressing:
- 3 tablespoons California Olive Ranch Miller’s Blend Reserve
- 1/4 cup apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
Instructions
1. Add all dressing ingredients to a medium sized mason jar and whisk well
2. Add all salad ingredients to a large salad bowl
3. Toss salad well with dressing
4. Top with pumpkin seeds
