Rainbow Chicken Salad

This salad is so pretty that you almost won’t want to eat it. But it tastes so good that, well, you will! Loaded with fresh veggies representing every color of the rainbow, crispy grilled chicken, and dressed with California Olive Ranch Garlic Apple Cider Vinaigrette, it hits the spot just right!

Ingredients

  • 1lb boneless, skinless chicken breast or thighs
  • 1 head fresh romaine lettuce
  • 1 can corn
  • 1 ripe avocado
  • 1/2 cup shredded purple cabbage
  • 1/2 a cucumber
  • 1 orange bell pepper
  • 1/2 cup chopped cherry tomatoes
  • 1/3 cup chopped fresh cilantro
  • 3 tablespoons chopped purple onion
  • 1 small jalapeño (optional)
  • 5-6 tablespoons California Olive Ranch Garlic Apple Cider Vinaigrette
  • Salt, pepper and garlic powder (for chicken)
  • 1 tablespoon California Olive Ranch 100% CA Olive Oil (for skillet)

Instructions

  1. Heat your skillet to medium heat with California Olive Ranch 100% CA Olive Oil
  2. Place chicken in skillet and sprinkle with a pinch each of salt, pepper and garlic powder, cook on one side
  3. While chicken is cooking, wash and chop romaine lettuce and place in a large salad bowl
  4. Add corn, sliced avocado, shredded cabbage, cucumber, bell pepper, tomato, cilantro, onion and jalapeño to salad bowl.
  5. Flip chicken after about 10 minutes, once thoroughly cooked remove from skillet and slice into strips
  6. Add chicken to salad and drizzle with California Olive Ranch Garlic Apple Cider Vinaigrette
