Pumpkin & Cream Cheese Cookie Sandwiches

Two perfectly soft, cinnamony pumpkin cookies sandwiching freshly made, fluffy cream cheese frosting- these pumpkin cookie sandwiches may just be the star dessert of autumn. Baking them with California Olive Ranch’s Avocado Blend Oil gives these cookies the perfect texture of falling away in your mouth but not crumbling all over the place. Ingredients

  • 3/4 cup salted butter, melted
  • 1/4 cup California Olive Ranch Avocado Blend Oil
  • 1 cup coconut sugar
  • 3/4 cup cane sugar
  • 1 egg
  • 2.5 cups all purpose flour
  • 2 teaspoons vanilla extract
  • 1.5 tablespoons pumpkin pie spice
  • 1 tablespoon cinnamon
  • 1/2 teaspoon fine salt
  • 1 teaspoon baking soda
  • 1 cup pumpkin puree

For Cream Cheese Frosting:

  • 8oz cold cream cheese (brick style not cream cheese spread)
  • 1/2 cup salted butter- softened to room temperature
  • 2.5 cups powdered sugar
  • 2 tablespoons heavy whipping cream
  • 1 tablespoon vanilla extract

Instructions

In a large mixing bowl add together dry ingredients of flour, cane sugar, coconut sugar, baking soda, pumpkin pie spice, cinnamon and salt. Mix well until combined.

  1. Make a well in the center of the dry ingredients and add in wet ingredients of California Olive Ranch Avocado Blend Oil, melted butter, egg and vanilla extract.
  2. Mix well until combined.
  3. Place cookie dough in fridge and let chill for one hour and up to overnight.
  4. When you’re ready to bake cookies - preheat oven to 350F
  5. Line a cookie sheet with parchment paper
  6. Using a tablespoon or cookie scoop- scoop out 1 tbs of cookie dough, roll into a ball and gently press down onto cookie sheet.
  7. Bake cookies in preheated oven for 12-14 minutes.
  8. When cookies are done baking, let cool to room temperature then frost every other one with 2 tablespoons of frosting and top with a bare cookie.

For Cream Cheese Frosting:

  1. In the bowl of a stand mixer, add in cream cheese and room temperature butter, whip on high for a minute until smooth and well combined.
  2. Add in heavy whipping cream, vanilla extract and powdered sugar one cup at a time.
  3. Whip on high until frosting is an even texture.
  4. Adjust to desired sweetness.
