Potatoes Au Gratin

Everyone’s got their favorite version of potatoes. For some it’s hash browns, for others French fries, but perhaps the most satisfying of potato dishes is Potatoes Au Gratin. Some even eat this as a main dish and not just a side. Loaded with 2 kinds of cheese, caramelized onions and hearty red potatoes this recipe is comfort food served straight from the skillet.

Ingredients

  • 7 medium sized red potatoes
  • 1 onion
  • 2 cups of milk
  • 1 cup of shredded cheddar cheese
  • 1/2 cup shredded gruyere or parmesan cheese
  • 3 tablespoons California Olive Ranch 100% CA Olive Oil
  • 3 tablespoons flour (or gluten free alternative)
  • 1 teaspoon dry mustard powder
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat oven to 375F
  2. Wash potatoes. Using a mandolin or a very sharp knife, slice potatoes very thin (1/8 inch is the goal)
  3. Slice onion as thin as possible
  4. Layer potatoes and onions in an 8 or 9 inch skillet or 3 quart baking dish
  5. In a medium sized saucepan, add in California Olive Ranch 100% CA Olive Oil and flour. Cook for 2 minutes on medium heat
  6. Add in seasonings and milk, cook on medium heat until it comes to a boil, whisking frequently
  7. Remove saucepan from heat and mix in cheeses until melted
  8. Gently pour cheese sauce over potatoes and onion. Spray a piece of tinfoil with California Olive Ranch and cover skillet
  9. Bake for 1 hour and 15 minutes
  10. Remove foil from top and cook for another 30 minutes
  11. Top with fresh parsley or green onion
