3 pounds pork tenderloin Salt and cracked black pepper 1/2 cup finely ground parmesan cheese 1 tablespoon Lucini® Premium Select Extra Virgin Olive Oil® 1 jar Lucini® Sicilian Olive and Wild Caper SauceInstructions
Pre-heat oven to 325 degrees Season the pork tenderloin with salt and black pepper. Roll pork tenderloin in the parmesan cheese. Heat a large nonstick oven-proof pan with olive oil until hot, but not smoking hot. Add the cheese and sear on both sides about 3 minutes. Place in the oven and cook about 20-25 minutes depending on the thickness of the tenderloin. Remove from the oven and allow to rest 3-5 minutes.
