Pappa al Pomodoro (Tuscan Tomato Bread Soup)

Pappa al pomodoro is a thick, Tuscan bread soup that transforms stale or leftover bread into a delicious and hearty soup, perfect for the fall or winter months. That makes this the perfect recipe to make to bring the taste of fresh tomatoes into your home year-round. This recipe calls for our Organic Rustic Tomato Basil Sauce, but any of our sauces would make an excellent base. jar of pasta sauce in between two bowls of Tuscan tomato and bread soup Recipe for Lucini Italia by The G & M Kitchen Ingredients:
  • 1/2 onion - finely chopped
  • 1 clove garlic - minced
  • 1 jar Lucini Organic Rustic Tomato Basil Sauce
  • A pinch of red pepper flakes
  • 4 cups water
  • ½ of a 1 pound loaf of day-old Tuscan bread - sliced and cut into 1/2 cubes
Two spoons and two bowls of tuscan tomato bread soup Instructions:
  1. Add 1 tablespoon of Lucini Premium Select Extra Virgin Olive Oil to a large soup pot and sauté the onion until it is translucent
  2. Add the jar of Lucini Organic Rustic Tomato Basil Sauce and a pinch of red pepper flakes
  3. Cook until warm, allowing all of the flavors to meld together (about 10 minutes)
  4. Add 4 cups of water and stir to combine
  5. Add in the bread in quarter batches and stir to combine
  6. Let the bread completely dissolve into the soup, creating a porridge like consistency
  7. Finish with a drizzle of extra virgin olive oil
