Beat eggs; set aside. Cut the onion into thin slices or chop roughly and heat in pan with the oil until it softens without changing color. Add a pinch of pepper to the beaten eggs, mix well and transfer to the frying pan. When you can see from the edges that the under-side is done, turn over. The omelette must never seem overdone or burnt, but must have a pale golden color. The strong flavor of the onion will contrast with the mild taste of the egg, backed up by the balsamic vinegar. This is why a small spoonful of balsamic vinegar must be poured over the omelette as soon as it has been transferred from the frying pan to a well-heated plate.
