Mediterranean Bean Salad with Garlic Lemon Yogurt
This Mediterranean Bean Salad is a refreshing meal that’ll keep you full and satisfied. The addition of the Greek yogurt adds even more protein than a typical Greek salad, and our 100% California Extra Virgin Olive Oil adds a bright and peppery finish that’ll keep you coming back for more.
Ingredients
Mediterranean Spice Blend:
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp sumac
- 1 tsp dried dill
- 1 tsp dried mint
- 1 tsp salt
- ½ tsp black pepper
Yogurt Base:
- 1 ½ cups greek yogurt
- 1 large clove garlic, grated
- Zest of one lemon
- 1 tbsp California Olive Ranch 100% California Extra Virgin Olive Oil, plus more for plating
- ¼ tsp salt
Bean Salad:
- 2 cans butter beans, drained and rinsed
- 1 cup cherry tomatoes, cut into quarters
- ½ english cucumber, diced
- ½ small red onion, sliced with a mandolin
- 2 tbsp fresh basil, roughly chopped
- 3 tbsp California Olive Ranch 100% California Extra Virgin Olive Oil
- Juice of ½ lemon
- Mediterranean Spice Mix
- ¼ cup feta cheese, crumbled
Optional, for serving: toasted bread
Instructions
Make the Mediterranean spice mix. Add all ingredients to a small bowl. Mix and set aside.
Make the yogurt base. Add all ingredients to a small bowl and stir until combined. Keep in the fridge until ready to use.
Make the bean salad. Add all ingredients except feta to a large bowl and toss to combine. Taste and add more salt or lemon if desired. Store in the fridge until ready to eat.
When ready to serve, add the yogurt to the base of a plate and swirl until the plate is coated. Add an additional drizzle of California Olive Ranch 100% California Extra Virgin Olive Oil. Place the bean salad on top of the yogurt, adding in the crumbled feta on top. Serve with toasted bread if desired. Enjoy!
