GF, DF Paleo-Friendly Blueberry Muffins
Fluffy, scrumptious blueberry muffins that are gluten, dairy and refined sugar free. These are amazing to have on hand for a filling and tasty snack that also feels great to eat. Naturally paleo friendly, with a dose of healthy fat from California Olive Ranch 100% CA Olive Oil and bursting, fresh flavor from the blueberries, this may just be your new go-to muffin recipe.
Ingredients
Dry Ingredients:
- 2 cups almond flour
- 2/3 cup tapioca flour
- 1/4 cup coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups blueberries (fresh or frozen)
Wet Ingredients:
- 2 eggs, room temperature
- 1/3 cup milk of your choice
- 2/3 cup maple syrup
- 1/4 cup California Olive Ranch 100% CA Olive Oil
- 1/2 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350F
- Line muffin pan with baking cups
- Add all dry ingredients, besides blueberries, to a mixing bowl and whisk together
- Add all wet ingredients to another mixing bowl and whisk together
- Add wet ingredients to dry ingredients and mix well, until a batter forms
- Fold in blueberries
- Evenly divide batter into 12 muffin cups
- Bake muffins for about 30 minutes, until a toothpick inserted comes out clean
- Let cool and serve alone, or with coffee, yogurt, or a drizzle of honey!
