GF, DF Paleo-Friendly Blueberry Muffins

Fluffy, scrumptious blueberry muffins that are gluten, dairy and refined sugar free. These are amazing to have on hand for a filling and tasty snack that also feels great to eat. Naturally paleo friendly, with a dose of healthy fat from California Olive Ranch 100% CA Olive Oil and bursting, fresh flavor from the blueberries, this may just be your new go-to muffin recipe.

Ingredients

Dry Ingredients:

  • 2 cups almond flour
  • 2/3 cup tapioca flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups blueberries (fresh or frozen)

Wet Ingredients:

  • 2 eggs, room temperature
  • 1/3 cup milk of your choice
  • 2/3 cup maple syrup
  • 1/4 cup California Olive Ranch 100% CA Olive Oil
  • 1/2 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F
  2. Line muffin pan with baking cups
  3. Add all dry ingredients, besides blueberries, to a mixing bowl and whisk together
  4. Add all wet ingredients to another mixing bowl and whisk together
  5. Add wet ingredients to dry ingredients and mix well, until a batter forms
  6. Fold in blueberries
  7. Evenly divide batter into 12 muffin cups
  8. Bake muffins for about 30 minutes, until a toothpick inserted comes out clean
  9. Let cool and serve alone, or with coffee, yogurt, or a drizzle of honey!
