Garlic Lemon Mint Cabbage Slaw

If you’re looking for a fresh, zesty new salad recipe to try look no further. This garlicky lemon mint slaw is so light, refreshing and packs a little bit of a punch, making it the perfect side to go along with hearty meats right off the grill this

summer. This is also a great salad option to make ahead as it only tastes better the more time the cabbage has to marinate in California Olive Ranch’s silky smooth Arbosana EVOO.

Ingredients

  • 1/2 a head of green cabbage
  • Juice of 1 lemon
  • 2 small garlic cloves, minced
  • 3 tablespoons California Olive Ranch Arbosana EVOO
  • 1 ripe avocado, thinly sliced
  • 1 garlic scape, optional
  • Crack of black pepper
  • 1/4 teaspoon fine sea salt
  • 1/3 cup fresh mint leaves, chopped

Instructions

Finely chop or shred cabbage and add to a large salad bowl. Add in fresh mint leaves, chopped garlic scape, avocado, minced garlic, salt, pepper, lemon juice, California Olive Ranch Arbosana EVOO and toss well. Salad is best served chilled and after it has had time to marinate in the fridge.
