Elote Salad
This salad is inspired by the beloved Mexican street corn, elote. Featuring crumbling Mexican cheese, lime juice, paprika and corn of course- this salad packs an incredible amount of flavor. Dressed with California Olive Ranch’s Garlic Apple Cider Vinaigrette this elote salad is a little spicy, mildly sweet and absolutely bursting with flavor.
Ingredients
- 1 jalapeño, thinly sliced
- 1/2 cup cherry tomatoes, sliced in half
- 1 persian cucumber, sliced
- 1 large avocado, thinly sliced
- 1/4 cup pepitas
- 3/4 cup Mexican crumbling cheese such as queso fresco or cotija
- 1 cup corn kernels, fresh is best but canned works well too
- 4oz. spring mix greens
- 3 tablespoons California Olive Ranch Garlic Apple Cider Vinaigrette
- 1/2 teaspoon paprika
- 3 tablespoons freshly squeezed lime juice
- 1/2 teaspoon salt
- Zest of 1/2 a lime
Instructions
- If using fresh corn, lightly brush with California Olive Ranch EVOO and grill for 5 minutes until slightly charred.
- Slice corn off the cob.
- To a large salad bowl, add spring mix greens, cherry tomatoes, avocado, corn, crumbling cheese, jalapeño, cucumber, and pepitas.
- Toss salad well.
- Add in lime zest, lime juice, salt, paprika and California Olive Ranch Apple Cider Vinaigrette and toss again.
