Cinnamon Apple Waffles

Waffles are always a hit for breakfast! Add in some apples and cinnamon to this super simple recipe for extra health benefits and texture. The extra thinly sliced apples soften just the right amount during the cooking process, leaving you with tender bursts of flavor in each and every bite.

Ingredients

  • 1 medium/large apple very thinly sliced with a mandoline or shredded.
  • A sweet, crisp variety such as cosmic crisp or gala works well here.
  • California Olive Ranch Extra Virgin Olive Oil Spray Bottle
  • 1 cup all purpose flour
  • 1/2 teaspoon fine salt
  • 1 teaspoon cinnamon
  • 1.5 tablespoons baking powder
  • 2 tablespoons coconut sugar
  • 2 eggs
  • 1 cup milk of choice
  • 4 tablespoons melted, unsalted butter

Instructions

  1. Preheat waffle iron.
  2. In a large mixing bowl, add in dry ingredients of flour, salt, cinnamon, baking powder, and coconut sugar.
  3. Make a well in the center of the dry ingredients and add in milk, eggs and melted butter.
  4. Combine ingredients but do not over-mix.
  5. Toss in sliced or shredded apple.
  6. Spray preheated waffle iron with California Olive Ranch EVOO.
  7. Scoop in 3-4 tablespoons of waffle batter to waffle iron- just enough so when it expands you have a complete waffle but not so much that it overflows.
  8. Top waffles with fresh whipped cream, maple syrup, butter, or a dash of pumpkin pie spice and enjoy.
