Cinco De Mayo Salad
Celebrate Mexico’s Day of Independence with this extra fresh, extra flavorful Cinco
De Mayo inspired salad. Sweet corn, creamy avocado, bell pepper, hearty beans
and lime bring together the most quintessential, delicious flavors of Mexican
cuisine in one bowl. Ready in less than 10 minutes this beautiful salad doesn’t
need to be enjoyed only in May- it’s a wonderful addition to add to your repertoire.
Ingredients
- 1 head of fresh romaine or butter lettuce, washed and chopped into bite sized pieces
- 1 15oz can sweet corn
- 1 15oz can black beans
- 2 fresh, ripe avocados, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/3 cup shredded Mexican cheese
- 3 fresh, ripe vine tomatoes
- Juice of 1 lime
- 3-4 tablespoons California Olive Ranch Lemon White Balsamic Vinaigrette
- 1 red bell pepper, washed, deseeded and chopped
- 1/4 teaspoon fine sea salt
- A few cracks of pepper
Instructions
- To a large salad bowl or plate add your fresh, chopped lettuce.
- Add in corn, black beans, cilantro, tomatoes, bell pepper, Mexican cheese, salt and pepper. Toss well.
- Squeeze in juice of 1 lime, fresh avocado, and California Olive Ranch Lemon White Balsamic Vinaigrette and toss again.
- Chill in fridge until ready to serve.
