Chocolate Chip Paleo Pumpkin Muffins (G/F, Dairy Free, Refined Sugar Free)

These paleo friendly chocolate chip pumpkin muffins are so cozy and delicious they’ll hit the spot every time. Best of all, they come together in one single bowl. Ingredients
- 1.5 cups blanched almond flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin spice
- 4 eggs
- 3/4 cup canned pumpkin
- 1/4 cup maple syrup
- 1 tablespoon California Olive Ranch Avocado Blend Oil
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips, optional
Instructions
- Preheat oven to 350F.
- Line a muffin tin with muffin liners.
- In a large mixing bowl, add dry ingredients of almond flour, baking soda, salt, cinnamon, pumpkin spice and mix well.
- Make a well in the center of dry ingredients and add in eggs, canned pumpkin, California Olive Ranch Avocado Blend Oil, vanilla extract and
mix well until combined. - Add in chocolate chips and stir in.
- Using a tablespoon, scoop batter into muffin liners, filling them about 80% of the way.
- Place muffins in oven and bake for about 40-45 minutes until a toothpick inserted in the center comes out clean.
