Carrot Miso Thai style Salad

A Thai-inspired salad that’s fresh, crunchy, and absolutely packed with flavor thanks to California Olive Ranch Carrot Miso Vinaigrette. This is one of those recipes that tastes just as good, if not even better, after hanging in the fridge for a day or two. Sweet, savory, and honestly addicting, even the biggest salad naysayers will be asking for seconds.


  • Half of a green or purple cabbage
  • Half of an onion
  • 5 medium carrots
  • 1 bell pepper
  • 1 head fresh cilantro
  • 1 medium tomato or 10 cherry tomatoes
  • 1/2 cup roasted peanuts
  • Approx 4 tablespoons California Olive Ranch Carrot Miso Vinaigrette


  1. Using a mandolin, thinly slice cabbage and carrots.
  2. Chop onion, cilantro, tomatoes.
  3. Rough chop peanuts, setting a few aside to top salad with.
  4. In a large salad bowl, add all ingredients. Toss well.
  5. Drizzle with California Olive Ranch Carrot Miso Vinaigrette. Toss again.
