Burrata, Arugula & Balsamic Strawberry Salad
Ingredients
- 1lb fresh strawberries, washed trimmed and halved
- 5oz fresh arugula
- 1/4 cup pine nuts
- 1/4 cup fresh basil leaves
- 1 8oz ball of fresh burrata cheese
- Pinch of salt
- A couple cracks of black pepper
- 1/3 cup California Olive Ranch Balsamic Vinaigrette
- Drizzle of California Olive Ranch 100% CA EVOO
Instructions
- Preheat oven to 350F
- Add sliced strawberries to a small bowl and cover with California Olive
- Ranch Balsamic Vinaigrette, let marinate while preparing the rest of the salad.
- Add pine nuts to a baking tray and roast for about 12 minutes until fragrant and golden brown, tossing periodically so they don’t brown on the bottom.
- To a large salad bowl or tray, spread your arugula and basil leaves.
- Place burrata ball in the center of the salad and gently slice open. Top burrata with a pinch of salt.
- Surround burrata ball with marinated strawberries.
- Top salad with a drizzle of California Olive Ranch 100% CA EVOO, a crack of black pepper and toasted pine nuts. Serve immediately.
