Burrata, Arugula & Balsamic Strawberry Salad

Ingredients

  • 1lb fresh strawberries, washed trimmed and halved
  • 5oz fresh arugula
  • 1/4 cup pine nuts
  • 1/4 cup fresh basil leaves
  • 1 8oz ball of fresh burrata cheese
  • Pinch of salt
  • A couple cracks of black pepper
  • 1/3 cup California Olive Ranch Balsamic Vinaigrette
  • Drizzle of California Olive Ranch 100% CA EVOO

Instructions

  1. Preheat oven to 350F
  2. Add sliced strawberries to a small bowl and cover with California Olive
  3. Ranch Balsamic Vinaigrette, let marinate while preparing the rest of the salad.
  4. Add pine nuts to a baking tray and roast for about 12 minutes until fragrant and golden brown, tossing periodically so they don’t brown on the bottom.
  5. To a large salad bowl or tray, spread your arugula and basil leaves.
  6. Place burrata ball in the center of the salad and gently slice open. Top burrata with a pinch of salt.
  7. Surround burrata ball with marinated strawberries.
  8. Top salad with a drizzle of California Olive Ranch 100% CA EVOO, a crack of black pepper and toasted pine nuts. Serve immediately.
