Balsamic Chicken



  1. Allow chicken to come to room temperature and season with salt and pepper thoroughly
  2. Preheat oven to 400 degrees
  3. Bring a cast iron skillet to high heat with olive oil
  4. Sear thighs skin down on skillet until heavily browned (about 5 minutes)
  5. Turn thighs right side up and introduce the butter
  6. Apply rosemary
  7. Insert chicken into oven and roast until internal temperature reaches 160 degrees
  8. Remove chicken and apply balsamic vinegar to deglaze skillet and chicken (use more than noted if seems necessary)
  9. Garnish chicken with lemon zest and serve
