Avocado Toast with Extra Virgin Olive Oil and Soft Poached Egg
- 2 slices country-style bread
- 2 soft poached organic eggs
- 8 oz smashed avocado
- 4 oz pomegranate seeds
- 2 tbsp California Olive Ranch olive oil
- salt and pepper
Sear/toast bread on a cast iron skillet with olive oil until both sides are browned and crispy, but the center of the bread is still soft.
Spread avocado mash evenly on both pieces of toast
Gently add a poached egg to each piece
Salt and pepper the eggs and gently pour California Olive Ranch olive oil over both pieces of toast, and garnish with pomegranate seeds, and serve.
