Apple + Brie + Thyme Crostini

A delicious crostini inspired by fall’s bounty! Brie, apple and thyme pair beautifully on golden, toasted baguette rounds. Simply toast the California Olive Ranch EVOO covered baguette rounds until golden then watch the creamy brie melt on top of it. Fresh, crisp apple slices, honey, dried chili flakes and thyme do the rest of the work to create a perfect bite to serve as an appetizer.

Ingredients

  • 1 baguette, sliced into 3/4 inch thick rounds
  • 1 8oz wheel of brie cheese
  • California Olive Ranch’s Chef’s Squeeze Bottle
  • 4 tablespoons raw honey
  • 1 teaspoon dried chili flakes
  • 2 medium sized apples, thinly sliced
  • Fresh thyme leaves, for topping
  • Flaky salt, for topping
  • Freshly cracked black pepper, for topping

Instructions

  1. Preheat oven to 500F on the broil setting.
  2. Place baguette rounds on a baking tray lined with parchment paper.
  3. Squeeze California Olive Ranch Chef’s Squeeze bottle EVOO over all baguette rounds.
  4. Place baguette rounds in preheated oven for 4-5 minutes until golden brown, keeping an eye so they don’t burn.
  5. Spread a schmear (about 1/2 a tablespoons worth) of brie on each crostini.
  6. Top each crostini with a slice of apple.
  7. Drizzle crostinis with honey.
  8. Top each crostini with dried chili flakes, fresh thyme leaves, flaky salt and pepper.
  9. Drizzle crostinis with more California Olive Ranch Chef’s Squeeze EVOO. Best served immediately.
