Ingredients

  • 4 cups thinly sliced green cabbage
  • 3 cups thinly sliced red cabbage
  • 2 cups grated carrots
  • 1 cup thinly sliced green onions
  • ½ cup chopped fresh mint
  • ½ cup extra virgin olive oil
  • 1/3 cup champagne or white wine vinegar
  • 1 Tbs. Dijon-style mustard
  • 1 Tbs. sugar
  • 1 tsp salt
  • 1 tsp white pepper 

Directions

    In a large bowl combine green and red cabbages with carrots, green onions and mint.  In a separate bowl whisk together extra virgin olive oil, vinegar, mustard, sugar, salt and pepper.  Toss vegetables with dressing.  Serve, or if not serving immediately cover and chill.
