California Olive Ranch (COR) employs a highly innovative farming method of high
density olive plantings (HDPs). This method means that olive trees are planted
in a hedgerow pattern that allows 670 trees per acre. These hedgerows are
mechanically harvested as opposed to hand picked. Automated harvesters are
used to pick the fruit so the olives can be processed as soon as they leave the
tree - usually within 30 minutes. The result allows COR to harvest
at optimum ripeness. Greatly enhancing quality, food safety, sanitation,
freshness and shelf life.

To enhance quality standards
and just-picked flavor, olives are immediately
pressed after harvest in COR's state-of-the-art
olive mill. Rigidly adhering to old world
standards of excellence COR uses the traditional
production method of cold extraction and
the natural procedure of "decanting."

All of COR's premium extra virgin olive oil has less than .03%
acidity. This is far below other extra virgin olive oil competitors. |

The North American Olive Oil Association (NAOOA) credits the growth
and interest in olive oil to its versatility and health benefits as well
as changes in U.S. eating habits. Olive oil has been shown to help prevent heart disease
and strokes, so industry analysts see continuing increases in U.S. consumer's
olive oil consumption. |

in retail sales, extra virgin olive oil

oil is a close second with 39%, followed
by extra light olive oil at 17%. |
